We have chosen Bronner and Johanniter grape varieties, reminiscent of Riesling, to produce this blanc de blancs cuvée. Careful work combined with a minimum of 9 months' ageing on slats guarantees the finesse of Bioul's bubbles and the delicacy of its aromas. Brut de Bioul is ideal as an aperitif with lightly smoked fish toast (salmon, trout, eel) and tarama, oysters, raw vegetables accompanied by a fromage blanc sauce, or plain goose foie gras.
