Belgian free-range chicken tagine with preserved lemon and artisan spices

By laetitia, on 19/07/2026

At Wimzzi.com, we love recipes that take your taste buds on a journey without making life complicated.

For this tagine, we start with a good Belgian free-range chicken and add a few carefully selected artisan products that turn a simple dish into something generous, fragrant and full of character.

Organic preserved lemon from Pipaillon, a spice blend created especially for tagine, a touch of Belgian artisan honey to round out the flavours… and, for those who enjoy a little extra heat, a spoonful of yellow L’Hari à Didi.

The result? An easy, convivial and aromatic tagine combining Belgian farm produce with artisan products available on Wimzzi.com.

THE RECIPE

Belgian free-range chicken tagine with preserved lemon, honey and spices

Serves 4 to 6

  • 6 chicken thighs or drumsticks from a good Belgian free-range chicken
  • 1 organic Pipaillon preserved lemon
  • 2 to 3 tablespoons Illico Presto Tajine Sweet Spices BIO
  • 1 tablespoon Belgian artisan wildflower honey
  • 2 onions
  • 3 carrots
  • 2 courgettes
  • 100 g dried apricots
  • 1 handful of almonds
  • 400 ml chicken stock
  • 2 tablespoons olive oil
  • A few sprigs of fresh coriander or parsley
  • Salt and pepper

For those who enjoy a little extra heat:

Yellow L’Hari à Didi

Method

  • Finely slice the onions and cut the carrots and courgettes into pieces.
  • Heat the olive oil in a casserole or tagine dish and brown the Belgian free-range chicken.
  • Remove the chicken temporarily and gently cook the onions for a few minutes.
  • Add the Tajine Sweet Spices BIO and stir to release their aromas.
  • Return the chicken to the pot.
  • Add the carrots, dried apricots and chicken stock.
  • Cut the preserved lemon into wedges or thin strips and add it to the dish. Preserved lemon gives the tagine an intense, fresh and distinctly Mediterranean flavour.
  • Cover and simmer gently for around 35 minutes.
  • Add the courgettes and honey.
  • Continue cooking for another 15 to 20 minutes, until the vegetables are tender and the sauce has slightly reduced.
  • Meanwhile, toast the almonds for a few minutes in a dry frying pan.
  • Just before serving, sprinkle the tagine with the toasted almonds and fresh coriander or parsley.
  • Serve with couscous, bulgur or simply some good bread.

The finishing touch

For those who enjoy a little more heat, place a jar of yellow L’Hari à Didi directly on the table.

This artisan chilli paste is made with yellow habanero peppers and flavoured with caraway, coriander, cumin and garlic.

Add it sparingly to each plate so everyone can adjust the level of heat to their own taste.

The result? A tagine in which the spices add depth, the preserved lemon brings intensity and the honey gently rounds out the flavours. The L’Hari adds an extra kick for those who want it.

BELGIAN WINE PAIRING

Pinot Noir from Domaine viticole du Chapitre

To accompany this tagine, we chose a Belgian Pinot Noir from Domaine viticole du Chapitre, located in Nivelles, Walloon Brabant.

This light red wine has a garnet colour and a powerful, spicy and complex nose.

On the palate, it reveals aromas of black fruit and candied fruit, together with subtle woody and spicy notes developed during 12 months of ageing in old barrels.

We find this profile particularly interesting with the chicken, the tagine spices, dried apricots and touch of honey.

Its balance of tannins, freshness and acidity allows it to complement the dish without overpowering it.

Domaine viticole du Chapitre also works with an absolutely minimal addition of sulphites.

Our tip: serve this Pinot Noir slightly chilled, between 14 and 16°C.

A warm and original Belgian wine pairing for the fruity and spicy flavours of the tagine.

WIMZZI.COM’S SELECTED ARTISAN GEMS

Organic preserved lemon by Pipaillon

Preserved lemon instantly gives the dish a Mediterranean character.

Just a few pieces are enough to flavour the entire pot.

Pipaillon is a Brussels-based artisan preserves maker producing organic condiments, pickles and preserves.

In this tagine, the preserved lemon brings freshness, depth and a pleasantly tangy note.

Tajine Sweet Spices BIO – Illico Presto

The Tajine Sweet Spices BIO blend makes it easy to add warm, aromatic flavours to the dish without filling your cupboards with multiple spice jars.

A few spoonfuls are enough to season the chicken and vegetables.

A convenient way to prepare a fragrant tagine while showcasing an artisan product selected by Wimzzi.

Belgian artisan honey

One spoonful is enough.

The aim is not to make the tagine sweet, but to balance the intensity of the preserved lemon and soften the spices.

For this recipe, we chose a Belgian artisan wildflower honey.

A simple addition that brings softness and helps tie all the flavours together.

Yellow L’Hari à Didi

The artisan gem for those who like a little heat.

Made with yellow habanero peppers, caraway, coriander, cumin, garlic and olive oil, this artisan chilli paste gives the dish plenty of character.

The best way to enjoy it? Place the jar directly on the table and let everyone add a small amount to their own plate.

Because a good recipe often starts with good ingredients, we love the idea of bringing together Belgian free-range chicken and several artisan products selected by Wimzzi.com.

A simple way to travel through flavour while celebrating the know-how of Belgian producers and artisans.
