This artisan chilli paste is made with yellow habanero peppers and flavoured with caraway, coriander, cumin and garlic.
Add it sparingly to each plate so everyone can adjust the level of heat to their own taste.
Pinot Noir from Domaine viticole du Chapitre
To accompany this tagine, we chose a Belgian Pinot Noir from Domaine viticole du Chapitre, located in Nivelles, Walloon Brabant.
This light red wine has a garnet colour and a powerful, spicy and complex nose.
On the palate, it reveals aromas of black fruit and candied fruit, together with subtle woody and spicy notes developed during 12 months of ageing in old barrels.
We find this profile particularly interesting with the chicken, the tagine spices, dried apricots and touch of honey.
Its balance of tannins, freshness and acidity allows it to complement the dish without overpowering it.
Domaine viticole du Chapitre also works with an absolutely minimal addition of sulphites.
Our tip: serve this Pinot Noir slightly chilled, between 14 and 16°C.
