La Moutardente is the revival of a traditional artisan mustard maker from Liège, Belgium, born from the commitment of passionate makers eager to rediscover the authentic taste of mustard through ancestral techniques and a relocalised production in Belgium. Deeply rooted in Liège, Belgium, the project promotes a sincere vision of flavour, terroir and transparency. The idea for La Moutardente emerged nearly twenty years ago from a simple observation: almost all mustard seeds used were imported, even though Liège once had several mustard producers. It became essential to revive this know-how, bring cultivation back locally and recreate a Belgian, artisan and purpose-driven mustard. Since 2021, mustard seeds have been organically grown in Lantin, near Liège in Belgium. They are then carefully sorted by Graines de Curieux and processed locally thanks to collaborations with Moutarderie Belge, Les Frangines and the Liège cooperative brewery. All vinegars, spices and aromatics used are organic. When certain ingredients are not available locally in organic form, La Moutardente works with regional artisans who share an “eco-purist” philosophy, respecting tradition and the environment, even without official certification. The current range is made from yellow mustard seeds, known for their milder flavour, and will gradually expand through local harvests and partnerships. The upcoming cultivation of brown mustard seeds will allow the creation of bolder mustards and new flavourful recipes. La Moutardente represents a Belgian, organic, local and artisan mustard from Liège, designed as a sustainable, authentic and flavour-driven product. A project made in Liège, Belgium, promoting short supply chains and Belgian craftsmanship, with the ambition of establishing an artisan mustard workshop in the heart of Liège, supported by local partners and cooperators.
